Glycerol dissolved in water disrupts the hydrogen bonding between water molecules such that the mixture cannot form a stable crystal structure unless the temperature is significantly lowered. Thus, glycerol has anti-freeze properties and is sometimes used with watercolours in the winter for plein air painting. It also makes watercolour wetter and last longer on the palette. Add it to glues and starches to make them more flexible and prevent cracking.
